Suvarotti Recipes

Suvarotti recipes: fry, varuval and Madurai-style masala.

Goat spleen works well with the bold flavours used in Tamil home cooking: pepper, shallots, curry leaves, chilli and spice masalas. Use these as practical starting points and adjust seasoning to your family’s taste.

Recipe 01

Pepper Suvarotti Fry (Goat Spleen Varuval)

You can use

Suvarotti pieces, onion or shallots, curry leaves, ginger-garlic, turmeric, chilli powder, black pepper, salt and a little cooking oil.

Method

Sauté onion, curry leaves and ginger-garlic until aromatic. Add the spices, then the cleaned suvarotti pieces. Cook thoroughly, finishing with generous freshly ground black pepper for a dry, strongly flavoured fry.

Recipe 02

Madurai-Style Suvarotti Masala

You can use

Shallots, tomato, curry leaves, ginger-garlic, chilli powder, coriander powder, turmeric, pepper, garam masala and salt.

Method

Cook the shallot-tomato masala until well reduced. Add the spice powders and suvarotti, then cook until the meat is fully done and the masala coats each piece. Finish with pepper and curry leaves.

Recipe 03

Onion & Curry Leaf Dry Fry

You can use

Plenty of sliced onion, curry leaves, turmeric, chilli powder, black pepper, ginger-garlic, salt and oil.

Method

Cook the onions until soft and lightly browned. Add curry leaves and spices, then the suvarotti. Continue cooking until fully done and the mixture becomes a dry fry that can be served with rice or dosa.

Before cooking

Handle raw organ meat carefully.

For Tamil Nadu customers, follow the Tamil Nadu Food Safety Department/FSSAI meat-safety framework: keep raw suvarotti refrigerated, keep it separate from cooked or ready-to-eat foods, use separate clean boards and utensils for raw meat, wash hands and food-contact surfaces after handling, and cook the meat to an internal temperature of at least 75°C before serving.

Ordering tip
